Rudder issue
The issue with the rudder pedals was caused by the XEnviro Turbulance settings. They are usually at about 100% from default.
The A330 is incredibly sensitive to that setting and that caused the rudder pedals to destabilise the plane.
Turned the setting down to about 20% and it reacts in the way it should.
